  • Overview

    The Food and Beverage Director will serve as an operational division head and member of the Executive Committee Leadership team. This individual will be responsible for directing and supervising all aspects of the food and beverage operations, including: restaurant, lounge, room service, banquets, and event set-up. This individual will primarily be responsible for directing and implementing nutritional integrity and quality of food, controlling and analyzing the financial position of the division, and ensuring the compliance of local, state, and federal regulations. The Food & Beverage Director will work closely with the Director of Catering & Conference Services, Sales Director, and Executive Chef. The Food & Beverage Director will report directly to the General Manager.

     

    The ideal candidate will have experience with strategic planning and marketing initiatives focused on maximizing revenue and developing business relationships to sustain long-term patronage. The model candidate will be currently in a role as an Assistant Director of F&B or a Beverage Manager looking to make their next career move into becoming a division head.

    Responsibilities

    • Work closely with the management team and have primary responsibility for the development of all food & beverage programming.
    • Assist Human Resources in successfully recruiting top talent for the F&B team, reducing overstaffing, staffing deficiencies, and payroll overhead costs.
    • Oversee the development and implementation of Standard Operating & Service Procedures for restaurant, room service, bar and banquet staff in collaboration with the Food and Beverage management team.
    • Develop and implement quality assurance programs of the highest level.
    • Establish and assure implementation of cleaning and sanitation procedures for kitchens, restaurants and storage areas.
    • Assure that local, state, and federal requirements are met with regards to food handling permits, alcohol server training and other mandates by OSHA.
    • Participate, initiate and promote departmental training for food and beverage departments.
    • Act as a liaison with the sales, catering, conference services and culinary staff, providing effective coordination between all parties in order to facilitate the management of events and meetings.
    • Manage labor management and payroll expenses for food and beverage departments.

    Additional Duties

     

    • Provide a highly visible leadership to the food and beverage team.
    • Oversee all aspects of the day-to-day operation of the food & beverage department, including cleanliness & sanitation, inventory control, par stock management.
    • Responsible for successful passing of all food & beverage related Health Department inspections.
    • Maintain high level of service and product quality with exceptional guest service satisfaction.
    • Prepare sales reports showing sales volume, revenue potential, etc.
    • Monitor sales performance of food and beverage outlets, and take supportive and corrective action when needed.
    • Work in conjunction with sales and marketing to develop and implement promotional packages aimed at hotel guests and local community.
    • Develop and maintain open and engaging relationships with other departments.
    • Create budgets and forecast, monthly and annually. Analyze and take responsibility for the financial performance of the division.
    • Participate in inventory reporting and month-end tasks.
    • Maintain an open door policy for employee relations concerns before escalation.

    Qualifications

    • High school diploma required.
    • Bachelor’s Degree in Hospitality Management or Restaurant Management, strongly preferred.
    • Foodservice Management Professional (FMP) certification is highly desired, but not required.
    • Proven successful track record of developing and managing 4-star food & beverage operations.
    • Ability to maintain a flexible work schedule, including evenings, nights, weekends, and holidays.
    • Participative, hands-on approach.  This is not an office job.
    • Experience in a high-end/luxury hotel environment is a plus.
    • At least 5 years of Food & Beverage management experience, preferably in a luxury environment.
